How can the stars in our Galaxy be older than the Universe?

You are right that the more we learn, the more questions
we have. Hopefully, our questions become more sophisticated.

Every measurement that we make has an uncertainty
associated with it. The stars in our galaxy are not
older than the universe. There are undoubtedly errors
in the measurements of these two ages that are simply
not understood at this time. It is important that
scientists make the most careful analysis that can
be made, and those results should be honestly presented
for peer review. When irreconcilable results are found,
the next step is to work to understand what went wrong.

Sometimes it is frustrating for people to hear results
that are incompatible. But this is the healthy process
of science, and we learn so much through this process.
